Harira
The Harira is the national Moroccan soup. During the thirty days of the Ramadan, each home is making this inebriating scented soup, whose filling the streets with its smell at sunset.

Mechouia
Compote of grilled sweet peppers Argan oil-flavoured.

Zaalouk
Eggplants caviar ant tomatoes cumin-flavoured.

Carrot salads
Caraway, cumin, olive oil and wine vinegar.

Raw fennel salad
Olive oil and lemon.

Cucumber Salad
Tomatoes, cucumber and red onions cut in very little dice.

Beet salad and purple olives
Coriander leaves-flavoured.

Small lamb Kefta
With a butter and tomato sauce.

Briouat
Filo pastries stuffed with lamb meat.

Charly's Couscous

The fifteen spices-flavoured "10 hours" lamb cooked and served in his clay pitcher.
